Ok Kamp Pasta
- 2 c tomato sauce of choice (POMI is my favorite choice)
- 2 c fresh tomatoes, on vine variety, chopped coarsely
- 1/4 c butter
- 12 oz mushrooms, crimini or baby bella's, halved
- 4 garlic cloves, minced
- 1 red onion, chopped
- 1 can whole black olives
- 1/2 c red wine
- 2 tbs red pepper flakes
- 1/4 c whipping cream
- 4 oz goat cheese
- 1/4 c fresh grated or shredded parmesan cheese
- 3/4 c fresh basil
- 1 package bowtie or penne (or shape of choice) pasta, boiled in salted water & cooked to taste
- In large saucepan, combine tomato sauce, tomatoes & olives, heat to a constant simmer, let simmer 15 mins.
- Meanwhile, sautee butter, onion & garlic over med/high until fragrant (onion becomes clear) - approx 3-4 mins. Add mushrooms, sautee 5 mins. Stir, sautee addl 5 mins. Add salt & pepper to taste.
- Add mushroom/garlic/onion mixture to tomato sauce, stir; add wine & hot red pepper flakes , whipping cream & 1/4c basil and continue to simmer, 15 mins. Add another 1/4 c basil & goat cheese: stir & combine.
- Prepare pasta of choice (recommended: bowtie, spiral or penne)
- Serve: dish prepared pasta and top generously with tomato sauce; top with remaining basil and parmesean cheese. Serve immediately. .
