Vegetarian Chowder
- 4 cups water
- 2 potatoes, diced
- 3 carrots, diced
- 1 stalk celery, diced
- 3 vegetable bouillon cubes
- 1 tsp salt
- 1/4 tsp white pepper
- 2 cloves garlic minced
- 2 bay leaves
- 1 -1pound can tomatoes, crushed
- 1-8ounce can tomato sauce
- 1 zucchini, halved lengthwise, sliced
- 1 cup sour cream
- Bring 2 cups water to boil. Add 1 potato and cook until very tender. Blend either in blender or immersion blender or even food processor until smooth. set aside.
- Put remaining water in pot and add remaining potato, carrots, salt, pepper, garlic and bay leaves. Stir in potato puree. cover and cook for 15 minutes. Add tomatoes with liquid, tomato sauce and zucchini. Simmer until diced potatoes and zucchini are tender about 15 to 20 minutes longer. Serve with sour cream, if desired.
