Finger-Lickin' Spicey Honey Chicken Wings
- 12 chicken wings
- 1 red chili finely chopped
- 1 teaspoon chili powder
- 1 teaspoon ginger, finely chopped
- zest of 1 lime, finely grated
- 1 teaspoon vegetable oil
- 2 tablespoons fresh cilantro, coursely chopped
- 2 tablespoons soy sauce
- 3 1/2 tablespoons honey
- 1. Cut off small wing tips and discard. Cut remaining wings into two parts and place in large bowl.
- 2. Add fresh chili, chili powder, fresh ginger, and lime zest to chicken. Mix thoroughly with hands (be sure to wear gloves or wash hands thoroughly afterwards). Marinate overnight or for at least 2 hours.
- 3. Preheat oven to 375F
- 4. Place chicken in single layer on baking sheet lined with foil. You may choose to Pam or butter the foil or use non-stick foil.
- 5. Bake 45-60 minutes. Turning once until golden brown or to desired crispiness. Let it cool for 10 minutes.
- 6. Heat large wok. Add oil. When oil is hot, add cilantro and soy sauce and stir-fry briefly. Add chicken wings and honey and stir-fry until chicken is completely coated and reheated. Serve hot.
