Italian Twice Baked Potato
- -2 Large Baking Potatoes
- -1/3 Cup Fresh Basil (chopped)
- -2 Balls Wet Mozzarella
- (4 center slices set aside, remainder chopped)
- -1 Package Prosciutto (chopped)
- -1/2 Cup Sour Cream
- -Olive Oil
- -Corse Salt
- -Preheat Oven to 375
- -Rub potatoes in olive oil and salt, place on baking tray
- -Bake the potatoes until soft (45 min - 1 hour depending on size
- -Remove potatoes, slice in half
- -Using a spoon, scoop out middle of potatoes, being careful not to puncture sides
- -Put potato insides into a mixing bowl
- -Add Prosciutto, chopped Mozzarella, Basil and mash
- -Mix in sour cream to smooth consistency
- -Spoon potato mixture back into potato skins
- -Top each with a slice of Mozzarella
- -Bake until Mozzarella on top is completely melted, serve hot
