Italian Twice Baked Potato

  1. -Preheat Oven to 375
  2. -Rub potatoes in olive oil and salt, place on baking tray
  3. -Bake the potatoes until soft (45 min - 1 hour depending on size
  4. -Remove potatoes, slice in half
  5. -Using a spoon, scoop out middle of potatoes, being careful not to puncture sides
  6. -Put potato insides into a mixing bowl
  7. -Add Prosciutto, chopped Mozzarella, Basil and mash
  8. -Mix in sour cream to smooth consistency
  9. -Spoon potato mixture back into potato skins
  10. -Top each with a slice of Mozzarella
  11. -Bake until Mozzarella on top is completely melted, serve hot
