Fresh Summer Pasta
- 1 box Dreamfields lingune
- 1 1/2 packages of diced prosciutto (you can use Serano ham or crisp bacon as well)
- 3 bags of baby spinach
- 1 bunch baby arugula
- 2 limes - juice and zest separated
- 2 cups crumbed feta cheese
- Salt and Pepper to taste
- 2 shallots small dice
- 2 cloves garlic minced
- 4 tablespoons of good Extra virgin olice oil separated (extra on the side)
- In large pot saute prosciutto in 1 tablespoon of olive oil, once it starts browning add garlic and shallots - stir for 1 min -make sure garlic does not burn.
- Cook pasta till it is just done
- Add lime zest to meat and remaining olive oil till you think there is enough for a sauce remmember the meat may have rendered so you may need less oil
- Add salt and pepper to taste and then add drained pasta to pot, turn heat off. Add spinach and argula to pot stir to wilt then add line juice.
- Serve with feta cheese on top.
