Spiced Pumpkin Muffins
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons cinnamon
- 1 teaspoon powdered ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 3 large eggs
- 3/4 cup vegetable oil
- 1 teaspoon vanilla
- 3 cups pureed pumpkin
- 3/4 cup chopped pecans*
- 4 Tablespoons brown sugar*
- Preheat the oven to 325 degrees F. Grease a medium muffin pan.
- Mix the flours, spices, baking soda, baking powder, and salt together.
- In a separate bowl, mix the sugar, oil, eggs,vanilla & pumpkin. Add flour mixture just until combined. Pour into prepared muffin pan 2/3 full.
- *variation... mix nuts & brown sugar, spoon a TBL spoon onto each muffin before baking.
- Bake for 20 minutes. Until toothpick comes out clean.
- Cool for 5 minutes and turn out onto a cooling rack.
