Mini Crockpot Pumpkin Pies
- 5 Large egg whites
- 1/4 cup Unsweetened almond milk (or low fat milk)
- 3/4 cup Pumpkin
- 3/4 cup Low fat cottage cheese
- 1/2 tsp Cinnamon
- 1/4 tsp Pumpkin pie spice
- 1/4 cup Baking stevia or 1/2 cup sweetener of choice that measures like sugar
- Pinch Salt
- Optional: 1 tsp vanilla or maple extract
- 2 WWP+*
- Spray 4 small mason jars or ramekins with non-stick cooking spray, (be sure they fit in your crockpot first). Place all of the ingredients in a blender and blend until smooth. Pour into jars, dividing evenly. Cook on high for 4 hours or on low 8 hours. Enjoy with Tru Whip if desired!
- (You can also bake the pumpkin pies in your oven. Place the ramekins/jars on a baking sheet, and bake at 350 degrees for 50-55 minutes, or until set.)
