Shrimp Creole
- 2 to 3 Tbsp. oil
- 1 c. celery
- 1 crushed garlic clove
- 2 Tbsp. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. chili powder (optional)
- 1 (14 oz.) can tomatoes
- 1 lb. cooked clean shrimp
- 1 green pepper, diced
- 1/4 c. Cheddar cheese, grated
- 2 medium onions, diced
- 1/2 lb. fresh or 1 can mushrooms
- 1/4 tsp. paprika
- 2 drops ???
- 1 (6 oz.) can tomato paste
- hot cooked rice
- Preheat electric skillet to 300u0b0.
- Saute onions, celery, garlic and mushrooms until tender.
- Sprinkle with flour and seasonings and blend in.
- Add tomatoes and tomato paste and simmer 10 minutes.
- Add green pepper and shrimp and simmer 8 to 10 minutes more.
- Grated cheese is also added with green pepper. Heat and serve over hot rice.
- Serves 4 to 6.
