Tasty Chicken Cashew
- 1 lb. Chicken, diced
- 1 tsp. salt
- 1 tsp. pepper
- 2 tablespoons peanut or coconut oil
- 1 tablespoon chili garlic sauce
- 1 bag stir fry vegetables
- 1 tsp. cornstarch
- 1/4 cup soy sauce
- 2 tablespoons peanut sauce
- 2 tablespoons cashews
- Season chicken with salt and pepper. Set wok or skillet to medium-high heat with peanut oil. When peanut oil heats up, season skillet with chili garlic sauce and stir for approximately half a minute. Add chicken to skillet let heat. Stir occasionally until chicken is done, then add vegetables. While vegetables are cooking, whisk cornstarch and soy sauce together. When vegetables have heated through, add peanut sauce, soy sauce mixture, and cashews then stir, turn wok off and let sit for 2 minutes. Add stir fry to noodles or rice & enjoy!
