Iron Seared Lamb Chops And Mash Potatoes
- Lamb:
- 1 1/2 rack of lamb
- 1 tsp garlic chopped
- 1 tsp ground fresh pepper
- 1 tsp kosher salt
- Mash Potatoes:
- 4 ea red and yellow potatoes
- 1 tsp garlic chopped
- 1/2 cup soy milk or milk
- 1 tsp kosher salt
- 1 tablespoon butter/margarine
- Thinly chop potatoes and boil (thin cuts cook quicker).
- Drain, add milk/soy and other ingredients.
- Mash until desired consistancy
- Place on low heat, stiring occasionally
- Slice lamb chops along bone to create lamb pops. Marinate overnight or just before cooking in above ingredients.
- Place in a cast iron skillet w/1tbs olive oil
- Sear 2-4 minutes each side
- Serve w/mash potatoes in center of plate and 2-3 chops inserted into potatoes w/bone up. Garnish with cilantro or basil.
