Shelley'S Special Cod Dinner
- 8 oz or more cod per person
- 2 small (2-3" dia., 6-8" long) yellow squash (small green zucchini if you can't get yellow)
- 1 medium onion
- One can of italian style chopped tomatoes (Two for two people)
- Optional: Other vegetables as inspired - such as sliced mushrooms or sliced red pepper
- Preheat oven to 500 degrees. Either spray with Pam, or drizzle some olive oil in the bottom of a baking dish. (A medium glass lasagna pan works fine.) Slice the zucchini and and onion in medium slices and layer them in the pan. Top with one to two cans of tomatoes. Drizzle with more olive oil. Sprinkle with ground pepper and liberal amounts of thyme. Cook the vegetables for twenty-five minutes.
- After twenty-five minutes, layer the cod on top of the vegetables. Sprinkle the cod with ground black pepper and olive oil. Cook an additional 12 - 14 minutes. Check the fish. It's done with it "flakes" with a fork.
