Spinach Manicotti
- 1/2 c. chopped onion
- 1 Tbsp. butter
- 1 lb. Ricotta or cottage cheese
- 1/2 c. grated Parmesan cheese
- 1 tsp. salt
- 12 large manicotti noodles, cooked and drained
- 1 garlic clove, minced
- 2 (10 oz.) pkg. frozen chopped spinach, cooked and drained well
- 4 oz. Mozzarella cheese, shredded
- 3 beaten eggs
- 1 Tbsp. lemon juice
- dash of pepper
- 2 c. spaghetti sauce
- Saute onion and garlic until tender.
- Combine all ingredients except noodles and sauce.
- Fill noodles with spinach mixture. Place in a greased 9 x 13-inch baking dish.
- Cover.
- Bake at 350u0b0 for 40 minutes.
- Heat sauce.
- Pour over noodles.
- Sprinkle with additional Parmesan cheese, if desired.
