Sausage Chili

  1. In a large heavy duty stock pot, Saute both the crumbled sausage and the links until just cooked through - removed from pan and set aside in bowl. Cut Links into 1/4" rounds and place in same bowl.
  2. In the same pot add 1 tbs olive oil and 1 1/2 tbs butter. Add chopped bacon and saute 3 - 4 minutes - till just getting crisp. Add minced onion, garlic, carrots and saute until just translucent - about 5 minutes.
  3. Add all of the spices. Saute Medium high 1 minute. Add the sausage back to the pot and stir well to combine about 1 minute.
  4. Add the beer and bring to a boil - scraping any brown bits from the bottom. Simmer 5 minutes.
  5. Add the crushed tomato and the whole tomatoes (slightly crushed) with their juce. Bring to a boil, and then simmer 30 minutes.
  6. Add the rinced and drained beans. Simmer 15 minutes.
  7. Taste for seasoning and adjust if necessary.
  8. Serve plain or over rice. Garnish with More crisp bacon, cheese, sour cream. ENJOY.
