Pear Soup With Asiago Lace
- Pear Soup
- 2 Tbs. vegetable oil
- 1 small yellow onion, chopped
- 3-4 C low salt vegetable stock
- 3 pears (anything ripe), peeled cored and chopped
- 1 15 oz can white beans, drained
- 1/2 C vanilla soy milk
- 1/4 tsp. mace
- 1/2 tsp. cinnamon
- 1/8 tsp ginger
- salt and pepper to taste
- 6 oz Asiago cheese
- cooking spray or 1 tsp. oil
- heat the oil in a medium saucepan and saute the onion until translucent. Pour in the broth. Add the spices, pears and beans, bring to a boil then cover and simmer for about 15 minutes, until pear is very soft.
- Puree in batches in a blender or food processor. Return to saucepan and add soy milk. Heat for another 5 minutes. Season with salt and pepper. Serve with Asiago Lace.
- Asiago Lace
- Line a cookie sheet with aluminum foil. Rub on a VERY thin layer of oil or spray with cooking spray.
- Put little heaps of cheese, about 2" across and 1/2 high at least 2" apart on sheet. Make 8 piles. Broil for 1-2 minutes. They will collapse into "lace" doilies. Allow to cool for 5 minutes, then very gently lift off of aluminum foil.
- Put a piece of lace into a shallow bowl and ladle in soup. Put another piece of lace on top.
