Pear Soup With Asiago Lace

  1. heat the oil in a medium saucepan and saute the onion until translucent. Pour in the broth. Add the spices, pears and beans, bring to a boil then cover and simmer for about 15 minutes, until pear is very soft.
  2. Puree in batches in a blender or food processor. Return to saucepan and add soy milk. Heat for another 5 minutes. Season with salt and pepper. Serve with Asiago Lace.

  4. Line a cookie sheet with aluminum foil. Rub on a VERY thin layer of oil or spray with cooking spray.
  5. Put little heaps of cheese, about 2" across and 1/2 high at least 2" apart on sheet. Make 8 piles. Broil for 1-2 minutes. They will collapse into "lace" doilies. Allow to cool for 5 minutes, then very gently lift off of aluminum foil.
  6. Put a piece of lace into a shallow bowl and ladle in soup. Put another piece of lace on top.
  7. Enjoy
