Chili
- 3/4 lb beef chuck cut into bite-sized cubes
- 1/2 lb sausage
- 1 lb. ground beef (20%)
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tsp. chili powder
- 1/2-3/4 tsp. chipotle chili powder
- 1/2 tsp. ancho chili powder
- 1 tsp. ground mustard
- 1/2 tsp ground cumin
- 2 tsp. sugar
- 1 large can diced tomatoes
- 1 large can tomato puree
- 2 cans dark red kidney beans
- S&P
- For garnish/topping:
- diced jalapenos
- diced spring onions
- sour cream
- grated mexican cheese blend
- Season beef with S&P. Brown beef chunks in olive oil in large dutch oven or soup pot. Add sausage and brown. Add ground beef and cook till no longer raw. Add onion and garlic; mix with meats and cook on medium heat for 10 min. Add spices and cook for 2-3 min. Add all canned tomatoes/puree and beans; stir and bring to bubbling. Taste and add S&P. Lower heat, cover pot and simmer 2 hours. Taste again and adjust seasonings.
- Serve in soup plate with garnish of grated cheese, sour cream, jalapenos and spring onions.
