Marinara Sauce
- 1/2 cup extra-virgin olive oil
- 2 or 3 slices of onion, finely chopped
- 2 garlic cloves, finely chopped
- 2 stalks celery, finely chopped
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 2 (32-ounce) cans crushed tomatoes
- 1/2 cup good red wine
- 1/2 tsp of oregano (more fresh if desired)
- 1/2 tsp of basil (more fresh if desired)
- Saute onion in olive oil. Add garlic and celery, and saute until aromatic. Add crushed tomatoes. Bring to a good simmer for 5 minutes or so to get a good cook going on the tomatoes. Add red wineand simmer for another 5 minutes or so. Add oregano and basil. Salt and pepper to taste. Add a bit of crushed red pepper if you like the bite. Simmer on medium low for about 45 minutes, adding more small amount of water if necessary.
