Banana-Almond Wraps
- 1/2 banana per person
- 2 rice wrappers per person
- Sugar
- 1 tsp. Brown sugar per person
- 1 tbs. Crystallized ginger per person
- 1 tbs. Toasted, sliced almonds per person plus additional for garnish
- 1 tps. butter per person
- Peanut oil--enough for deep fry
- Orange segments (four per person)
- Banana syrup (optional)
- Edible flowers (optional)
- Soak rice wrappers 2 at a time in hot water until soft.
- Dissolve 1 tbs. brown sugar in 2 tbs. hot water.
- Grind together: brown sugar, ginger, add almonds at end of grind, so they are not ground too fine.
- Spread out a wrapper.
- Paint top half with brown sugar & water mixture.
- Cut banana in half and each half lengthwide.
- Put one banana quarter on edge of wrapper.
- Spread on butter on banana.
- Spoon brown sugar, ginger, almond mix on top.
- Wrap tightly.
- Set aside.
- Prepare other wraps.
- Heat oil.
- Fry slowly so that bananas inside are cooked, about 15 minutes.
- Remove from oil. Drain on paper towels. Sprinkle heavily with granulated sugar.
- Drizzle with banana syrup, if desired.
- Sprinkle with toasted almonds.
- Serve with orange segments and flowers.
