Banana-Almond Wraps

  1. Soak rice wrappers 2 at a time in hot water until soft.
  2. Dissolve 1 tbs. brown sugar in 2 tbs. hot water.
  3. Grind together: brown sugar, ginger, add almonds at end of grind, so they are not ground too fine.
  4. Spread out a wrapper.
  5. Paint top half with brown sugar & water mixture.
  6. Cut banana in half and each half lengthwide.
  7. Put one banana quarter on edge of wrapper.
  8. Spread on butter on banana.
  9. Spoon brown sugar, ginger, almond mix on top.
  10. Wrap tightly.
  11. Set aside.
  12. Prepare other wraps.
  13. Heat oil.
  14. Fry slowly so that bananas inside are cooked, about 15 minutes.
  15. Remove from oil. Drain on paper towels. Sprinkle heavily with granulated sugar.
  16. Drizzle with banana syrup, if desired.
  17. Sprinkle with toasted almonds.
  18. Serve with orange segments and flowers.
