Southwestern Salad With Cilantro Lime Vinaigrette

  1. Salad:
  2. Romaine lettuce
  3. Grape tomatoes
  4. Green onions, sliced
  5. Small baby bell peppers - red, yellow or orange, diced
  6. 1/2 cup black beans
  7. 12 cup sweet frozen corn, thawed (or canned)
  8. 1 - 2 TBSP raw or toasted pumpkin seeds
  9. 1 avocado, diced
  10. Cotija Cheese
  11. Tortilla strips for salad
  12. Cilantro Lime Vinaigrette (recipe below) to taste
  13. In a large salad bowl add chopped lettuce, tomatoes, green onions, avocado, bell peppers, black beans, corn, tortilla strips, pumpkin seeds and cotija cheese. Top the salad with the vinaigrette to taste & serve.
  14. Cilantro Lime Vinaigrette:
  15. 1/2 cup chopped cilantro
  16. 1/4 cup canola oil
  17. 1-2 TBSP fresh lime juice
  18. 1 TBSP apple cider vinegar OR red wine vinegar
  19. Salt & Pepper to taste
  20. 1 clove garlic, minced
  21. 1/2 tsp. oregano
  22. Use an immersion blender or a regular blender to blend the dressing. Let the flavors mingle for at least 30 minutes before using.
  23. NOTE: You might want to double the dressing if making a large salad.
