Peach French Toast
- 1 cup brown sugar
- 1/2 cup butter
- 2 Tbsp water
- 1 can sliced peaches
- 5 eggs
- 1 Tbsp vanilla bean paste
- 1 pinch cinnamn
- 12 slices day-old french bread - 3/4" thick
- In a saucepan, stir together brown sugar, butter, and water. Bring to a boil, then reduce heat to low and simmer for 10 minutes, stirring frequently.
- Pour the brown sugar mix into a 13x9 pan, to cover the entire bottom of the pan. Drain the peaches and place them in a layer over the sugar coating, then top with the slices of french bread.
- In a medium bowl, whisk eggs and vanilla. Slowly pour over the bread to coat evenly. Sprinkle with cinnamon.
- Cover and refrigerate overnight (at least 8 hours).
- Remove the dish from the fridge and let sit for 30 minutes, to come to room temperature.
- In the meantime, pre-heat the oven to 350 degrees.
- Bake for 25 - 30 minutes, or until the bread is golden-brown.
