Carolina'S Quick And Easy Stew
- 2-4 lbs. Ground Lean Beef or Chili meat
- 1 1/2c. of freash carrots (Diced)
- 1 onion (cut into four equal pieces)
- 2 Garlic cloves(minced)
- 1 1/2c. of celery (Diced)
- 2pkgs. of any brand brown gravy mix
- 2pkgs of any brand beef stew
- mix
- 1 1/2c. of diced potatoes
- 1-28oz can of diced or whole tomatoes with juice
- 1/4 of a med. size cabbage head(washed and roughly chopped)
- 1/2c. of chopped cilantro
- dash of cumin
- salt and pepper to taste
- 1)Prep. all vegetables and set aside.
- 2)In a large pot brown the lean ground beef on med-high heat until cooked,drain all grease.
- 3) Add onion and garlic to browned beef and cook for 5 mins.
- 4) Add water to fill the pot 3/4 full and then add the packages of brown gravy and beef stew mix. Add can tomatoes with all juices and a dash of cumin. simmer for 5 mins.Add a little more water for less thickness.
- 5) Add all vegetables and cook for 15 mins. or until half way done. Then add cabbage and cilantro. Cover and simmer for 10 more mins or until veggies are cooked and cabbage is tender.
- 6) Salt and Pepper to taste and serve hot with warm corn bread or tortillas. Enjoy!
