Tropical Summer Salad

  1. Place the greens in a serving bowl. Top with the mango, red pepper, pear, red onion, pistachios, raisins and blue cheese.
  2. For vinaigrette, mix garlic, salt, mustard and vinegar well. Very slowly, whisk in the oil until it is all incorporated.
  3. Add enough vinaigrette to coat salad and gently toss. Season with salt and pepper and serve.
