Cold Sesame Noodles
- 1/2 c tahini
- 1/4 c unsalted roasted peanuts, finely chopped
- 1 1/2 Tbls rice-wine vinegar
- 1 t chile powder
- 1 t grated ginger
- 1 clove garlic, minced
- 1 1/2 Tbls soy sauce
- 1 t sugar
- 1 1/2 Tbls lime juice
- 1 1/2 Tbls chile oil
- 2 Tbls sesame oil
- 1/4 t cayenne pepper
- 1/2 t salt
- 1 pound udon noodles
- 1 Tbls toasted sesame seeds
- Place all ingredients, except noodles and sesame seeds in a blender add 6 Tbls water, puree till smooth.
- Boil noodles in 1 Tbls salt 7-8 min. Drain & rinse in cold water.
- Transfer to bowl, pour mixture and toss to coat. Sprinkle with sesame seeds and serve.
