Stuffed Zucchini
- 1 1/2 lb. zucchini (about 3)
- 1 medium onion, chopped
- 1/4 c. margarine or butter
- 1 small green pepper, chopped
- 1 c. boiling water
- 1/2 tsp. salt
- 1 (2 oz.) jar pimento, drained
- 1 c. herb seasoned stuffing mix
- 1/2 c. Mozzarella, shredded
- Use enough water and salt in proportion given to cook the zucchini, about 8 to 10 minutes or until tender.
- Cool slightly. Cut each in half lengthwise.
- Spoon out
- pulp and chop coarsely. Place cut side up in ungreased baking dish.
- Cook and stir onion in margarine until tender.
- Add chopped pulp, green pepper, pimento and stuffing mix.
- Fill the zucchini with the mix. Sprinkle each with 1 tablespoon cheese.
- Bake, uncovered, at 350u0b0 until hot and cheese is melted, 25 to 30 minutes.
