Irish Brown Bread
- Dry ingredients
- 1 cup plus 2 Tablespoons all purpose flour
- 4 cups whole wheat flour
- 1/3 cup toasted wheat germ
- 1 and 1/2 teaspoons baking soda
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons salt
- Wet ingredients
- 2 and 1/3 cups buttermilk
- preheat oven to 400 degrees
- sprinkle baking sheet with 2 Tablespoons all purpose flour
- mix together all the rest of the dry ingredients
- add buttermilk and stir to moist dough.
- Knead dough for 1 minute.
- form dough into an 8 inch round. transfer to baking sheet. use a sharp knife and cut an X across the top of the round going into the dough about 1/4 inch.
- bake about 50 minutes. you'll know it's done if you take it out of the oven (use a baking mitt or towel), thump on the bottom of the bread. If it sounds hollow it's done! wrap in a tool and let cool. serve with butter and jam
