Fancy Egg Scramble
- 1 c. diced Canadian bacon or 1/2 small roll sausage (4 to 8 oz.)
- 1/4 c. chopped green onion
- 7 Tbsp. butter or margarine (divided use)
- 12 beaten eggs
- 1 (3 oz.) can mushroom stems and pieces, drained
- 1 recipe Cheese Sauce (recipe follows)
- 2 1/4 c. soft bread crumbs (3 slices)
- 1/8 tsp. paprika
- In large skillet, cook bacon or sausage and onion in 3 tablespoons butter or margarine until onion is tender, but not brown.
- Add eggs and scramble just until set.
- Fold mushrooms and cooked eggs into Cheese Sauce.
- Turn into a 12 x 7 x 2-inch baking dish.
- Combine remaining melted butter, crumbs and paprika; sprinkle atop eggs.
- Cover; chill until 30 minutes before serving (can refrigerate overnight).
- Bake, uncovered in a 350u0b0 oven for 30 minutes.
- Makes 10 servings.
