Salmon Encrusted With Spiced Pecans
- Salmon filets 1/2 pound per person
- 1 1/2 cups chopped spiced pecans*
- (recipe included)
- 1/2 cup bread crumbs
- lemon juice
- salt pepper
- garlic salt
- drizzle salmon with lemon juice
- mix bread crumbs and pecans together
- cover salmon completely with pecan/breadcrumb mixture
- place in baking dish
- 400 degrees preheated oven
- bake for 30-45 mins.
- Spiced pecans
- 1 egg white
- 2 Tb. Cold water
- 1/2 cup sugar
- 1/4 tsp each:
- cinnamon
- clove
- allspice
- Whisk all together and pour over 1 pound of pecans. Mix well. Place on a greased cookie sheet in a single layer. Bake for 1 hour at 250 degrees. Remove immediately from cookie sheet or they will get soggy.
