Gorgeous Green Gratin
- 6 russet potatoes
- 3 cups heavy cream
- 1/2 lb broccoli rabe, half inch peices
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 2T olive oil
- 1 T butter
- 1/4 cup grated parmesean.
- preheat oven to 375F. BLanch broccoli rabe in boiling water for 2 mins. shock in an ice bath. Saute the broccoli in the olive oil, over medium heat for one minute adn the garlic and saute one minute more. Drain and reserve broccoli. Slice potatoes 1/8 of an inch thick. Put potatoes, cream, red pepperflakes, broccoli, salt and black pepper in a pot and bring to a boil. Rub a baking dish with 1 T butter, add the potato slices in a decorative pattern, cover with the cream. Bake, covered with foil in oven 50 minds or until the potatoes are tender. Uncover, top with parmesean and bake another five min, until golden browns.
