Lamb And Kielbasa Stew
- 1 Tablespoon olive oil
- 3/4 Pound lamb, trimmed & cut into 1/2 inch cubes (leg of lamb works well)
- 2 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1 large tomato, seeded & cut into medium dice
- 2 cans cannellini or great northern beans, drained
- 6 oz. kielbasa, sliced thin diagonally
- 1/3 Cup dried bread crumbs
- 1)Preheat oven to 400 degrees
- 2)Heat oil in medium skillet
- 3)Add lamb cubes and saute until browned, about 4 minutes
- 4)Add garlic and thyme and saute until garlic softens, about 1 minute
- 5)Add tomato, beans and kielbasa and bring to simmer
- 6)Season with salt and pepper to taste
- 7)Transfer to 2-qt casserole dish and sprinkle with bread crumbs
- 8) Bake until bread crumbs are golden brown, about 8 minutes
