Sausage And Couscous Stuffed Zuccini

  1. Sear zuccini in sautee pan flesh side down in 1 tabls. of butter then turn heat to med-low, add garlic and simmer to your taste of texture. Remove zuccini and set aside.
  2. Put water in sauce pan with reamaining butter, boul., lemon rind, and garlic from pan until it comes to a boil.
  3. MEan while, prossess sausage and long onion with olive oil until texture is fine. crumbles.
  4. When water comes to a boil, add couscous, stir, cover and let sit for 5 min.
  5. Stir in Sausage and long onion. Stuff Zuccini. Drizzle or squirt Tomato Sauce on top and sprinkle on parm. cheese, Bake at 350 for 20 min. Garnish with Lemon.
