Squash Dressing
- 1 to 1 1/2 qt. cooked, chopped yellow squash and liquid
- 20 biscuits, cooked
- 3 pans cornbread, cooked
- 3 sticks butter
- 1 stalk celery, chopped
- 1 to 2 large onions, chopped
- 6 to 8 eggs, beaten
- black pepper to taste
- In very large deep pan crumble breads.
- (I use the food processor for making
- bread
- crumbs.)
- Add
- onion,
- celery and butter.
- Heat squash
- and
- liquid almost to boiling.
- Add eggs to first mixture and gradually add squash and liquid until you get "dressing" consistency
- and
- stir until butter melts.
- Add pepper. This really makes
- a
- lot.
- I
- usually
- cook
- 1/2 and freeze the other half.
- Cook
- in
- Pyrex dish at 350u0b0 for about an hour.
