Tomato Cucumber Salad
- Veggies
- 1.5 pounds tomatoes
- Pinch of kosher salt and black pepper
- Pinch of sugar
- 2 medium cucumbers
- 1/2 large red onion
- 30 small fresh basil leave
- Dressing
- 1/2 cup EVOO
- 1/4 cup red wine vinegar
- Pepper
- 1 teaspoon kosher salt
- 4 cloves garlic, minced
- 1 teaspoon sugar
- 1 teaspoon dried oregano
- Core tomatoes and cut lengthwise into 6-8 wedges. Cut each wedge in half crosswise. Put in bowl with pinch of salt, pepper and sugar.
- Cut ends off cukes and use peeler to make long stripes in the skin. Cut in half lengthwise, then crosswise into 1/4 inch slices. Add to the tomatoes.
- Peel the onion and cut lengthwise into slivers, add to other veggies and toss.
- Clean and dry basil leaves. Stack then roll into a tight cigar. Cut crosswise into thin strips and stir into salad.
- Whisk all dressing ingredients in small bowl, and pour over salad.
- Marinate at room temp for several hours, then serve.
