Tomato Cucumber Salad

  1. Core tomatoes and cut lengthwise into 6-8 wedges. Cut each wedge in half crosswise. Put in bowl with pinch of salt, pepper and sugar.
  2. Cut ends off cukes and use peeler to make long stripes in the skin. Cut in half lengthwise, then crosswise into 1/4 inch slices. Add to the tomatoes.
  3. Peel the onion and cut lengthwise into slivers, add to other veggies and toss.
  4. Clean and dry basil leaves. Stack then roll into a tight cigar. Cut crosswise into thin strips and stir into salad.
  5. Whisk all dressing ingredients in small bowl, and pour over salad.
  6. Marinate at room temp for several hours, then serve.
