Italian Turkey Meatloaf

  1. Pre-heat oven to 350.
  2. Finely chop onion and peppers.
  3. Coarsely chop the turkey pepperoni.
  4. Mince the garlic or you can use the already prepared garlic, as I do.
  5. Mix the onion, peppers, garlic, basil, oregano, turkey pepperoni, italian dressing and olive oil.
  6. Sautee over low heat until tender (the onions will be translucent).
  7. Set aside to cool.
  8. Add above ingredients to ground turkey and mix together.
  9. Mix in green pepper sauce, ketchup, Asiago cheese, sundried tomatoes, and capers. Add breadcrumbs (just enough to help hold mixture together ... it should still be somewhat wet) and mix.
  10. Turn out onto baking sheet or broiler pan. Form into round loaf shape and apply a thin coat of ketchup to the outside. This will provide a glazing affect.
  11. Bake at 350 for approximately one hour. Remove and set aside for approximately 5 minutes before cutting into 1 inch slices.
