Italian Turkey Meatloaf
- 1 lb. Turkey
- 1/3 C. Chopped Sweet Onion
- 1/4 C. Chopped Red, Yellow, & Orange Peppers (baby peppers)
- 1/8 C. Chopped Turkey Pepperoni
- 2 Tbs. Kraft House Italian Dressing
- 1/4 tsp. Oregano
- 1/4 tsp. Basil
- 1/8 C. Carapelli Premium Extra Virgin Olive Oil
- 2 tsp. Minced Garlic
- 1/8 C. Chopped Sundried Tomatoes
- 1 tsp. Capers
- 1/8 C. Shredded Asiago Cheese
- 5 dashes (approx. 1 tsp.) Emeril's Green Pepper Sauce
- 1/8 C. Seasoned Bread Crumbs
- 1 tsp. Ketchup
- Pre-heat oven to 350.
- Finely chop onion and peppers.
- Coarsely chop the turkey pepperoni.
- Mince the garlic or you can use the already prepared garlic, as I do.
- Mix the onion, peppers, garlic, basil, oregano, turkey pepperoni, italian dressing and olive oil.
- Sautee over low heat until tender (the onions will be translucent).
- Set aside to cool.
- Add above ingredients to ground turkey and mix together.
- Mix in green pepper sauce, ketchup, Asiago cheese, sundried tomatoes, and capers. Add breadcrumbs (just enough to help hold mixture together ... it should still be somewhat wet) and mix.
- Turn out onto baking sheet or broiler pan. Form into round loaf shape and apply a thin coat of ketchup to the outside. This will provide a glazing affect.
- Bake at 350 for approximately one hour. Remove and set aside for approximately 5 minutes before cutting into 1 inch slices.
