Eclair Pie
- 1 c. water
- 1/2 c. (1 stick) oleo
- 1 c. flour
- 1/2 t. salt
- 4 eggs
- 2 pkg. instant vanilla pudding
- 2 1/4 c. milk
- 1 c. whipping cream, whipped
- 1/4 c. sugar
- 1 t. vanilla
- Chocolate frosting
- Preheat oven to 400u0b0. Put water and margarine in sauce pan. Bring to boil and lower heat. Add flour and salt. Stir over low heat until dough leaves side of pan; remove from heat. Beat in eggs one at a time until smooth. Place spoonfuls of dough on a cookie sheet and spread to form a 7-inch circle. Bake at 400u0b0 for 40 minutes; turn off oven and let pie shell stay in oven for 15 minutes. Combine pudding and milk in a mixing bowl. Place pudding in refrigerator for 15 minutes. Blend whipped cream, sugar and vanilla into chilled pudding. Slice the pie shell in half horizontally to
- form two layers. Remove the top half and spoon pudding mixture on the bottom half; replace the top half. Frost with chocolate frosting.
