Quiche

  1. Pie crust:
  2. Mix together the flour and shortening. Add water until the dough is slightly sticky (you can add more flour if you put too much water in). Roll out the dough on a floured board into a round shape large enough to fit into your pie plate. Place the dough into the pie plate and then prick the dough to prevent uneven rising.
  3. Filling:
  4. Pre-heat oven to 425.
  5. Saute the onion in olive oil. If adding other veggies, also add them.
  6. In a small bowl, mix the sauted onions (+ veggies), eggs, and milk. Add the cheese and spices.
  7. Pour mix into the uncooked pie crust and cook for 10 minutes.
  8. Lower the oven temperature to 350 and cook until the center of the quiche is firm (~30 minutes).
