Mum'S Cut & Come Again Cake
- 1 lb self-raising flour
- 1/2 level teaspoon salt
- 1 level teaspoon mixed spice
- 8 oz granulated sugar
- 8 oz block margarine (or butter, or mixture of the two)
- 4 oz currants
- 4 oz sultanas
- (few chopped glace cherries?)
- 3 medium eggs
- just over 1/4 pint milk
- Heat oven to 375
- Grease and line an 8" - 9" cake tin
- Sieve flour, salt, and mixed spice into a mixing bowl.
- Cut margarine into small pieces and rub into flour mixture till it resembles breadcrumbs, then stir in sugar and fruit.
- Beat eggs and milk together and add to dry ingredients; mix until well blended together. (You may need to add a little extra milk if the mixture is too dry.)
- Place mixture in tin and bake for 1 1/2 hours, or until firm to the touch and golden brown.
