Melt-In-Your-Mouth Chicken Pie
- 1 large fryer
- 1 can undiluted cream of mushroom soup
- 1/2 tsp. pepper
- 1 c. buttermilk
- 2 c. chicken broth
- 1 stick melted margarine
- 1 c. self-rising flour
- 1 tsp. salt
- 1 pkg. frozen peas and carrots, cooked
- 1 1/2 c. cooked Uncle Ben's rice
- Cook chicken until tender.
- Remove meat from bones; place in a 13 x 9-inch pan.
- In saucepan, mix and bring to boil the reserved broth and soup.
- In another bowl, combine margarine, pepper, salt, flour and buttermilk; mix thoroughly to form batter.
- Sprinkle cooked peas and carrots and rice over the chicken.
- Pour broth mixture over this.
- Spoon batter over top.
- Bake at 425u0b0 for 25 to 30 minutes.
- (I use a little less salt and pepper.)
