Tortilla De Patata

  1. Peel the potatoes and slice slivers, or cut small cubes, into a bowl. Dice the onion and combine with potatoes.
  2. Add oil to a pan over high heat and bring to a simmer. Drop to medium heat and add potato/onion mix. You can add the chorizo at this point as well if you want it in the oil, or you can wait until later.
  3. Cover pan and open every 3 minutes to stir. Let cook for 15 minutes or until potatoes feel cooked and are starting to brown.
  4. Pour potatoes/onions into strainer and let drain while collecting oil.
  5. Mix eggs and salt together and whip. Combine this with potato/onion mix as well as chorizo if not yet included. Mix this together while mashing slightly any larger potatoes.
  6. Coat high-walled frying pan with the oil drained earlier and place over high heat. Bring heat down to medium and pour entire mix into pan.
  7. While in pan, shake lightly to settle and cook for 3-4 minutes. To flip, place a plate that creates a mostly perfect seal along the edge of the pan and quickly flip the tortilla onto the plate. Then slide the tortilla back onto the pan to cook the other side. Cook for an additional 2 minutes, feeling the top to determine when done.
