Summer Fruit Pizza
- Pie dough for a two crust pie (1# 2oz)
- 1 3oz package cream cheese
- 3/4 cup sugar, divided
- 1 T milk
- 1 T grated orange rind
- 2/3 cup heavy cream
- 2 T cornstarch
- 1/4 cup water
- 1/2 cup orange juice
- 1/4 cup lemon juice
- Assorted summer fruit: strawberries, blueberries, peaches and bananas
- 1. Pre-heat oven to 400. Roll pastry to a 15" circle. Place in a 14" - 15" pizza pan. Prick all over with a fork. Bake 12 - 15 minutes till golden brown. Cool on a rack.
- 2. In the bowl of a mixer combine cream cheese, 1/4 cup of the sugar, milk, and orange rind. Beat until smooth. Add heavy cream and whisk until thick. Spread over the cooled crust. Chill.
- 3. In a saucepan combine 1/2 cup sugar and cornstarch. Stir in the water, orange juice and lemon juice. Cook stirring until thickened.
- 4. Arrange the fruit decoratively over the pizza. Spoon the orange sauce over the fruit and chill for 2 hours.
