Chow Chow(Delicious With Meats And Beans!)

  1. Chop cabbage; add 4 teaspoons salt.
  2. Work with hands, mixing and squeezing until a bit of juice comes from cabbage.
  3. Add cut up peppers and tomatoes.
  4. Work a bit more; add chopped onions.
  5. Make syrup of vinegar, water, salt and sugar.
  6. Put chopped ingredients into cold syrup and bring to a boil (a good boil in the center of the pot).
  7. Cook about 5 minutes after boil begins.
  8. Begin to put into hot, sterile jars from center of the pot.
  9. Do not let cook too long or syrup will cook away.
  10. Seal.
  11. Yield:
  12. 8 pints.
