Chocolate Sour Cream Frosting
- 3/4 cup heavy cream
- 8 ounces semisweet chocolate, chopped
- 1/4 cup light corn syrup
- 8 tablespoons unsalted butter at cool room temp, cut into 8 pieces
- 1/2 teaspoon vanilla
- 1/2 cup confectioners sugar
- place the cream in a small saucepan over low heat until just simmering. Remove from heat, add the chocolate, vcover and let sit for five minutes. Remove cover and whisk until smooth. Transfer mixture to the bowl of an electric mixture and allow to cool to room temperature. add remaining ingredients and mix on low until the sugar is incorporated. Increase the spped to high and whip until light and fluffy, about three minutes. If mixture is too soft to whip, refrigerate for about 15 minutes or until it is fairly cool to the touch.
