Ginger Cookies
- 2 1/4 C all-purpose flour
- 2 t ground ginger
- 1 t baking soda
- 3/4 t ground cinnamon
- 1/2 t ground cloves
- 1/4 t salt
- 3/4 c butter or margarine, softened
- 1 c sugar
- 1 egg
- 1/4 c molasses
- 2 T sugar (I use colored for the holidays)
- Combine flour, ginger, soda, cinnamon, cloves and salt. Set aside.
- In a separte, large bowl, beat margarine or butter and 1 cup sugar until light and fluffy. Add egg and molasses, beat well. Stir in dry ingredients.
- Shape into 1 1/2 inch balls, roll in the 2 T sugar and place on ungreased cookie sheets, about 2 1/2 inches apart.
- Bake in a 350 oven for about 10 minutes until light brown and still puffed.. Let stand for a few minutes before transferring to a wire rack to cool.
