Eggplant With Garlic Sauce
- 1 skinny long eggplant (cut into bite size pieces)
- 1 teaspoon corn starch
- 2 tsp oyster sauce
- 2 tsp soy sauce
- 1 tsp sugar
- half cup of water
- 4 garlic cloves (minced)
- 1 tsp of hot pepper flakes
- 2 Table Spoon peanut oil
- Combine the corn starch, sugar, oyster sauce, soy sauce and water, until all ingredients dissolve.
- Heat oil in wok until you see smoke.
- Throw in the minced garlic until flagrant. (before it turns brown)
- Once flagrant, add the eggplant and hot pepper flakes then stir fry for a minute or two. (High Heat)
- Then after two minute of stir fry, you add the corn starch mixture. Let it start bubbling. Then stir fry for another 4 minute or until you start seeing the corn starch mixture thickening and becoming flagrant. Then plate.
