Eggplant With Garlic Sauce

  1. Combine the corn starch, sugar, oyster sauce, soy sauce and water, until all ingredients dissolve.
  2. Heat oil in wok until you see smoke.
  3. Throw in the minced garlic until flagrant. (before it turns brown)
  4. Once flagrant, add the eggplant and hot pepper flakes then stir fry for a minute or two. (High Heat)
  5. Then after two minute of stir fry, you add the corn starch mixture. Let it start bubbling. Then stir fry for another 4 minute or until you start seeing the corn starch mixture thickening and becoming flagrant. Then plate.
