Beautiful Butternut Squash

  1. Place squash in large pot and cover with boiling water. Let set off the stove for 10 minutes. Cool by pouring in cold water until squash is comfortable to handle. Peel outer skin. Cut squash in half crosswise, then lengthwise. Remove seeds. Chop squash into approximately 1/2 inch squares.
  2. Remove outer skin of onion. Chop reminder into 1/2 inch chunks.
  3. Pour 1/4 cup olive oil into pan or pot large enough to hold squash & onions. Stir in squash and onions to coat with oil. Sprinkle lightly with salt.
  4. Cook, uncovered, about 15 minutes on medium to medium-high heat, stirring frequently with a spatula -- until squash is tender but still firm.
  5. Add more salt if needed, pour into a bowl and serve.
