Sweet And Sour Pork
- 2 lb. fresh pork shoulder
- 1 Tbsp. shortening
- 1 clove garlic, minced
- 1 large green pepper, cut in strips
- 1 c. sliced celery
- 1 Tbsp. cornstarch
- 1 Tbsp. shortening
- 1 1/2 c. Dr. Pepper
- 1/2 c. soy sauce
- 1/3 c. vinegar
- 1/2 tsp. ground ginger
- 2 (No. 2) cans pineapple chunks
- Have pork shoulder sliced 1/4-inch thick.
- Cut into 2-inch strips, removing bone.
- Melt shortening in large frying pan.
- Add meat; brown lightly.
- Add Dr. Pepper, garlic, soy sauce, vinegar and ginger.
- Cover and cook over low heat until meat is tender, about 1 hour.
- Add celery and green peppers; cook 5 minutes.
- Mix cornstarch with some of the juice from the pineapple.
- Stir into meat mixture.
- Add pineapple with rest of juice.
- Cook until green peppers are barely tender.
- Serves 6 to 8 over rice.
