Cauliflower Benedict
- 2 head of cauliflower, broken into pieces
- 1/2 cup nutritional yeast
- 1 tablespoon whole wheat flour
- 1 cup water
- 1 ounce walnuts, toasted and ground
- 1/2 teaspoon Bragg Liquid Aminos (optional)
- 2 teaspoons salt-free Dijon mustard
- 1/2 teaspoon tarragon
- 4 ounces smoked tofu (1/2 block)
- 2 fresh large tomatoes
- 4 whole wheat pita bread halves (or other whole grain)
- dash paprika
- black pepper, to taste
- Steam cauliflower.
- Prepare sauce: In saucepan whisk yeast and flour together. Add water, walnuts and aminos and stir over medium heat until sauce starts to thicken. Stir in mustard and tarragon and simmer on low heat until ready to serve.
- Slice tofu and tomatoes into thin slices. Heat tofu in microwave. Toast pita bread halves. On each pita, place 1 oz of tofu slices, tomato slices, and steamed cauliflower. Top each portion with 1/3 cup sauce. Sprinkle on paprika and black pepper to taste.
