Mixed-Up Lasagne
- 12 oz cooked pasta - penne, ziti, or fusilli
- 1 jar prepared tomato sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzerella cheese
- 1/2 cup grated parmasan or romano cheese
- 1 egg
- 1 lb frozen spinach, defrosted and drained
- oregano, basil, salt and pepper to taste
- Preheat oven to 350
- Mix together ricotta, mozzerella, parmasan, and egg, herbs, salt and pepper. Add spinach and cooked pasta, mixing until just incorporated.
- In a square 9-10" baking pan, spoon a thin layer of prepared tomato sauce. Place cheese and pasta mixture on top. Cover with remainder of tomato sauce. Top with a sprinkling of grated parmasan and mozzerella.
- Bake for 30-40 minutes, until heated through.
