Dad'S Vegetarian Cauliflower Curry Soup
- 1 head cauliflower, diced into small pieces
- 1 yellow onion, chopped
- 2 cloves garlic, diced
- 1 stalk celery, chopped
- 4 cups vegetable broth (Imagine is my favorite)
- 2 tbsp butter or olive oil
- 1 tbsp yellow curry powder (use less for milder soup)
- 1. Saute garlic, celery, and onion in butter or olive oil for five minutes, or until onions begin to soften.
- 2. Add in curry and stir. Then add diced cauliflower and stir. Pour in broth, cover, and reduce heat.
- 3. Simmer for about 25 minutes or until cauliflower is soft.
- 4. Now grab your blender and add soup in batches, blending until somewhat smooth. (Be careful!) Leave some of the soup unblended for a little texture.
- 5. Serve with a dollop of plain yogurt, a sprinkle of black pepper, and a sprig of cilantro.
