Dad'S Chili
- 2 lbs grass fed ground meat (Okay, any kind is good, but grass fed is the best.)
- 1/2 large chopped Texas 1015 onion
- 1/2 cup chopped celery
- 1 can diced tomatoes
- 1/4 cup olive oil
- 1 can refried beans (Thanks to the chef at Rice Epicurean Markets for this idea.)
- 1/2 can black beans
- 1 tablespoon oregano
- 1 teaspoon cumin
- 1/4 cup chili powder
- 1/2 cup cilantro
- 1 teaspoon salt
- 1 teaspoon white pepper
- 2 tablespoons Masa flour
- 2 tablespoons garlic

- Obviously the quantity of seasonings and spices is a rough estimate cause that's how we do it on the open range. In large black pot, cook ground meat and drain. Add olive oil and let meat brown. Add chili powder, oregano, cumin, cilantro, salt, pepper. Stir. Add masa flour and stir, breaking the meat chunks into smaller sizes. Add onions, garlic, tomatoes, celery and chicken stock until the right consistency -- a little watery. Stir often. Add refried beans and black beans. Let cook stirring often until the onions and celery are cooked. Serve with a side of Fritos which people will instinctively know to crumble over the chili.
