Baked Sweet Potatoes And Mangoes
- 3-4 small sweet potatoes (the orange ones), peeled and finely chopped
- 1 large or 2 medium mangoes, peeled and cut into large pieces
- 1/2 a stick of butter, melted
- 1/2 cup of real maple syrup
- squeeze of a 1/4 lemon
- 1/2 tsp sea salt
- 1/2 tsp fresh ground pepper
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- Preheat oven to 400F
- Arrange potatoes in a glass dish according to the amount, leaving room to add mangoes later.
- Toss together with the rest of the ingredients.
- Cover and bake for 15 minutes. Uncover and stir - leave uncovered from here on out. Stir every 15 minutes for the next 1/2 hour.
- Stir in the mangoes and bake, stirring every 15 minutes for the next 1/2 hour.
- Let cool at least 15 minutes before serving.
