Dad'S Chili
- 3 lbs ground beef
- 1 lbs hot italian sausage
- 10 strips of bacon, fried and diced
- 1 cup of both onion & celery, diced
- 2 green peppers
- tbsp salt and pepper
- 1 tbs chili powder
- 1 tsp cumin
- 4 cloves crushed garlic
- 2 28oz cans of tomato sauce
- 1 3 oz can of tomato paste
- 1 can of light and dark kidney beans
- Brown beef and sausage, drain.
- Saute bacon, till almost done to your liking, add chopped onion, celery and green pepper and saute till almost done.
- Add bacon mixture to beef and sausage, add tomato products and STIR.
- Add all spices. Stir.
- Simmer for at least 1 and 1/2 hours (the longer the better).
- One hour before serving, add the beans (after draining) and simmer till done.
